You can enjoy this light and fluffy popover recipe and still get healthy fiber. I’ve even been known to sneak a tablespoon of ground flax seed in the batter! It is the perfect companion to my lentil soup. I like to cook them in the popover pan I got at the Jordan Pond House in Acadia, but you can also get them on Amazon. By going half and half with the flour the batter stays light enough to pop yet still have some of that filling fiber! There needs to be some fat in the milk in order for these to pop. I tried making them several times with just 1% milk and they never popped. This recipe makes about 5-6 popovers. You can double it if you need to make 12.
Ingredients For Whole Wheat Popovers
- 1/2 cup whole wheat flour
- 1/2 cup white flour
- 2 eggs
- 1 tsp salt
- 1 cup 2% milk or 3/4 cup skim or 1% milk with 1/4 cup half and half.
Preheat oven to 450. Grease and flour popover pan. Beat all ingredients only until smooth. Do not overbeat. Fill cups 2/3 full and bake in oven for 25 minutes and then turn the oven down to 350 without opening the oven door and bake 15 minutes longer.
