Smoothie

I love my smoothie recipe.  It is an entire meal in one tall glass that is delicious, nutritious and ambitious!  It gives me a serving each of fruit and veggie, my daily recommended amount of flax seed, a good amount of protein and a serving of dairy.  My husband planted kale in our garden in Portland, Maine this year which gave us a terrific yield from May until the end of November with just one planting!  I like using kale or spinach because they are sweeter and neither are as gritty as broccoli.

Ingredients For Smoothie

  • 1 cup fresh or frozen kale or spinach
  • 2 tbsp ground flax seed
  • 1 cup low-fat plain Greek yogurt
  • 1 cup frozen mixed berries
  • 1 tsp vanilla
  • 1/2 skim or 1% milk
  • 1/2 cup water

In a strong blender start with the veggie and the water and blend until smooth.  Then add the yogurt and flax seed and milk and blend until smooth.  Finally add the frozen fruit and blend again until smooth.  I recommend drinking it within 5-10 minutes.  Because of the fiber, it will thicken with time.  You can always stir in more water if it does thicken. This recipe has about 350 calories, 30 grams of protein, 45 grams of carbs and 10 grams of fiber.
