Breakfast is one of the most important meals of the day. Often times people load up on sugary cereal, a donut or a bagel with cream cheese which only leads to a sugar spike later in the morning, fatigue and increased hunger. Many people have insulin resistance in the morning meaning that their bodies do not handle these sweet, refined carbohydrates well. Getting adequate protein with breakfast has been linked to more mental alertness during the day and to less snacking at night which can help with weight loss. The following recipes were developed with this in mind. Good sources of protein for breakfast include eggs (use egg whites if you have a high cholesterol or LDL), fat-free Greek yogurt and low-fat cheese. Breakfast can also be an opportunity to get another serving of veggies by adding broccoli or spinach to eggs or having a glass of low sodium V8 juice.
