Healthy Chili Recipe

Nothing like a bowl of steaming hot healthy chili on a cold winter day with a serving of cornbread!  This healthy chili recipe is low in fat using ground turkey breast instead of beef and has lots of veggies, difficult to even taste for those who struggle with getting the recommended 2 1/2 cups a day.   You can use canned beans, but starting with dried beans is not that difficult.  All you need to do is to soak the beans overnight in a pan of water and cook them for an hour on low heat before adding them to the chili.  It takes little effort, just some forethought, and they freeze well so you can prepare the whole bag and use the rest later.   This recipe will serve about 6-8 people.  Find my cornbread recipe under the healthy side dishes section.

Healthy Chili Ingredients

  • 1 pound ground turkey breast
  • 2 cups kidney or pinto beans
  • 1 28 oz. can diced tomatoes
  • 1 6 oz. can of tomato paste
  • 1 boxes frozen chopped spinach
  • 1 1/2 tbsp. chili powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1 tsp. cumin
  • 1 tbsp. oregano
  • 6-8 cloves fresh garlic minced
  • 1 large diced onion
  • 2 tbsp. canola oil

Sauté onion and garlic in the canola oil in the soup pan on medium until the onion is caramelized.  Add the ground turkey and brown.  Add all the rest of the ingredients and mix well.   Turn down the heat and let simmer on low for about an hour.
